DiffPDF is exactly the type of utility I was looking for!

I had already found diff-pdf, but it seemed to be more "code" oriented. I couldn't really get the same kind of display as what DiffPDF produces.

PDFs are text files so you could use windiff...
The markup is probably unreadable though.

Alternatively use a tool to convert the PDFs to text files and compare
those.
