I haven't used Word in years and years, but I don't think that "protected" is the way to do that (track changes). Once you've got a properly tagged Word document, open it in OOo. In OOo, select Edit | Changes and select the Record and Show menu options. From there, you can exchange documents with other users (be sure to save in .DOC format, of course, so Word can read it) and they'll be able to see your changes and vice versa. We've been swapping documents with Word users and OOo users for years and haven't had an issue yet.
