To amplify:
"su" is essentially "give me administrator priv".
"su -" turns you into the administrator.
The difference is that "su -" gives you the administrator's environment.
For example, with "su -", now your home directory is /root, not /home/me.

Well, not exactly.... as sudo only runs THAT command. Although I suspect
a lot of folks 'su' just to run a single command. <s>
