Yeah, nothing like a nice deep-fried eggplant. My grandmother used to salt them, place them on paper towels to let them dehydrate, then dip them in egg, cover them in bread crumbs, and fry them in olive oil. Mske sure the oil is hot so they don't get soggy.
It doesn't get much better than that.
