Slice, boil, drain, and then fry or better yet - bake. Coat lightly w/cooking spray or olive oil, sprinkle w/salt, garlic powder, and whatever-the-heck-else you like, and bake at about 400 until golden brown. Trying to fry a raw potato just flat out doesn't work, as I found out when I was a short order cook, wondering why no one was eating their hash browns...
