We're settled on Win 2K for the foreseeable future.

Trend Micro Officescan is a decent commercial centralized network 
anti-virus system that works fine on Win 2k. It has a web-install utility 
so you can set up the client at each workstation, or you can push installs 
to the workstations. It updates daily on the server and then the users are 
updated when they log in. It's a bit pricey, though.
