        Are you sure that you updated the copy in the iTunes library? I just  
opened up an MP3 in a hex editor and edited the album name. When I  
then switched to iTunes and did a Get Info on that file, it showed  
the modified album name. No import or anything was required.

        Right-click on the song in iTunes and choose the Windows equivalent  
of "Show in Finder" (is it 'Show in Explorer'?). If the file that is  
displayed is not the file that you edited, then that's your problem.
