Workstation will allow you to run full blown servers (2K, 2K3 Linux etc) no problem and is the most frequently used product. The GSXServer product is really for dedicated servers - and consequently dearer.
I run everything on my VMWare now. The only choice to make is what do you want as your base OS, Linux or XP - or even windows 2K which gives a really small footprint.
