Truly, there wasn't much to do. Word processing, spreadsheets, TuxMath, Internet browsing, printing. For what they need, I don't think they needed much coaching or teaching.
My parents successfully transitioned from Windows ME to Ubuntu and they have called me twice in over two years. Once was when their digital camera wouldn't be recognized by Ubuntu.
