I've looked around to see where/how to add new fonts but can't seem to find
out the process for this.

Tools, Options, IDE tab, and Fonts brings up the default fonts, but there
doesn't seem to be a path or way to add to the default font set?

You could pay for fonts that will scale to the size you want as
another alternative. The size limit you see is off of the font, and
not the textbox WAG here but probably true.
