There is a free utility available for download wd2003_2007CmdRef.exe which
will give the user a 2003 interface and menu (can't remember where though).
If they hover over the menu option a tooltip comes up which shows where the
equivalent command is in 2007.  I took some time to get used to the new
layout but now much prefer it.  It is only 1.5Mb so I can email it to you if
you wish.
