AFAIK, the only features in Ultimate that are not in Professional are the BitLocker (drive encryption) and the ability to switch languages. Everything else, including domains and the XP virtual machine, are in Professional. I'd argue to stay with Pro because Ultimate will just be a bit more bloated.
