I got burned a couple times in 2000, the year I quit my day job and became a 
freelancer. Ever since then I've stuck to two rules that have served me well:

+ money upfront before non-trivial work is performed
+ pay is by the hour, no fixed-price agreements, no exceptions

I can't count the number of people that never called me back after finding out 
my 
terms, and I'm fine with that. 99% of them wouldn't have been satisfactory 
relationships anyway.

One time I was in a real dry spell (2006-ish) and instead of changing my terms 
I 
responded to a head hunter that found me a 2-month-long full-time W2 Python job 
that 
paid decently where I made overtime and towards the end they asked me to stay 
on for 
another 6 months. I was about to negotiate it when I landed my current 
consulting gig 
which has treated me really well.

I'll give and take to keep the income flowing, but I'll never again do 
consulting 
fixed-price without a deposit.
