I can't think of why you can't edit the table. The cell is an html5 text input object and tapping it should bring up the keyboard to allow entry into the cell.
A google search for handsontable and android touch screen shows there have been issues in this area. There are suggestions that a double tap of the cell is necessary to get to edit mode. Perhaps you could google and try a few experiments and report back.
