Kip (and Bill in another current thread), I think the problem is that you have not installed other graphics/... packages from pacman. When I did so, plotdef appeared. I think their are one or two such packages not listed in the infamous "j plot" part of help, namely bmp, color, gl2, and gtk. I don't know that they all need to be installed, but I found myself doing so.
