Got it - an IE bug. http://support.microsoft.com/default.aspx/kb/927917
Basically, moving the <script> block from Google Maps that initialises the map to right before the </html> tag fixed it. IE versions prior to IE8 crash when some JS tries to modify the body as it's loading, basically.
