Color generally refers to a specific or signature sound that a piece of gear gives to a track or tracks of audio. When you hear the term uncolored or clean it means that that compressor, mic or whatever have you allows the audio to run through without affecting the tone of the audio. You have clean compressors and then you have tube compressors, tube compressors will almost always change the tone of a sound. Transformers, circuit design, and various tubes all can change the color that a plug or piece of gear infuses into the audio. This is the short exclamation now you can research more if you want.
