"Speakers (unplugged)" when headphones are plugged in. Anything we can

Hmm, good point. Gnome just hides unavailable devices, so there is no extra string at all.

To be fair, I don't really like the idea of Speakers toggling between "No" and "Unknown", I just couldn't figure out a better way to do it.
