Hello Toby, From what I can read here, the server is responding with '500 Internal Server Error' to the rtsp RECORD request sent by pulseaudio. We may find quite a lot of reasons to this, and I'm afraid pulseaudio's log won't be enough to debug the issue...
Is it possible to you to dump the network traffic down to a file while this is happening ? You can use WireShark [1] for example, available in fedora repos. The dump will hopefully help identify the problem...
