Hey alejo have you tried adding a kernel boot option lang=es?
see in in broth.sh : --bootappend-live "persistent file=/pure.cfg timezone=Europe/Athens keyb=us lang=el" \ this is for a greek remix of puredyne you will have to make sure that the es language packs fro xfce are there i think.
