Yes, you can add new swiki using the web-based "admin" swiki.  I
haven't had to upload anything since the original transfer.

Not really, unfortunately.  I'm running my swiki at port 8080 and
Apache at port 80 to support some other applications, but I haven't
really looked at any of the other alternatives.  If I do I'll try to
report on it to the list.
