Looks like it's something to do with the pyglet.app.run(), the cursor gets 
drawn during the flip.

If you use the simple event loop:
while True:
    pyglet.clock.tick()

    for window in pyglet.app.windows:
        window.switch_to()
        window.dispatch_events()
        window.dispatch_event('on_draw')
        window.flip()

The cursor will then show up.
