>From the output it looks like you use Python Distribution Anaconda. PyInstaller is not tested with this Python distribution. >From the output there is issue with the 'hook-pywintypes and 'pywintypes' module. pywintypes27.dll and pythoncom27.dll are not in standard location than CPython uses and pyinstaller is not able to handle that.
