Hi Máire, PyMOL requires the other mainchain atoms to be present in order to generate a nice cartoon representation. The only exception to this is if you're willing to work with a simple tube, in which case you can enable the cartoon_trace setting ("set cartoon_trace,on"), followed by "cartoon loop" or "cartoon tube".
