Mark (& indeed all Mac users) MacPyMOL can be launched in two flavors, based on the name of the executable:
If the executabled is named MacPyMOL, PyMOL launches in the mode you're familiar with: a single-window Cocoa-based interface. If the executable is renamed PyMOLX11Hybrid, then PyMOL launches using the Tcl/Tk/X11-based, two-window interface you're familiar with from Windows and Linux. That's how you can get at the color slider you seek.
