Hi Corey,

You cannot easily cut up a map like that. You can, however, cut up
isomeshes, isosurfaces, and volumes around a selection. See the
isomesh and isosurface commands
(http://pymolwiki.org/index.php/Isomesh). specifically the "carve"
option, for more help.
