Thank you all for your input. Seems to be that the mid-term goal should
be to allow the opening of several projects while in the short-term,
people can use one of the workarounds discussed here.

Different application document model on OS X. I'd rather not promote
hacks like this, it might confuse OS X users (ie. you get an icon in
the Dock for each app instance, not normal).

/Applications/QGIS.app/" - however, since many OSX users do not know
about the command line - is there a more user friendly trick to open
