I think the problem lies within the latest processing version.
When I install QGIS with ubuntu unstable, it ships a rather old version of
processing 2.6. GRASS 7 working in the toolbox.
Then the plugin is recommended to be updated to 2.10.1 -> GRASS 7 not
working.
I then searched for other versions of processing, and there is the e.g.
the latest version before 2.10.1 available here for download:
Version 2.9.3
http://plugins.qgis.org/plugins/processing/version/2.9.3/download/
Extracted and copied to the plugins folder in .qgis2, replacing the 2.10.1
version, GRASS 7 works again.
The pity is, that in the new processing version, there is a new dissolve
polygons function with additional attribute operations available, which is
the missing link in a model I have to make, but either this works, or the
rest of my model (with GRASS algos).
Me and my co-workers do not want to update to QGIS 2.10 at the moment,
cause we would like to enjoy the Long Term Release, which is so far more a
Long Trouble Release for me ;)

My problem was that in ubuntugis, the GRASS version was
changed to 7.0, and I could not get that version to work
with QGIS.
To get QGIS 2.10 with a working GRASS in Processing, I
removed qgis, grass and the lot. Then I removed ubuntugis
from atp and made sure that qgis.org was in atp.
I then installed the lot (qgis, grass, qgis-plugin-grass,
python-qgis).
After that, GRASS 6.4.3 was back and the GRASS commands
were able to run through Processing with QGIS 2.10.

Using the model builder to create some workflow, I
became aware that there is a Processing update available.
Doing this update, the model doesn't work anymore,
cause GRASS stopped working in the toolbox.
When I do a fresh install without updating Processing,
I get an error when I try loading my model (which I unfortunately saved
with the new Processing version).
Ok, I could create that model again with the
non-updated Processing version, so the GRASS function I need is
available, but I also rely on the new "OGR Dissolve Polygons" function
introduced with the new Processing version, cause I need to sum up an
attribute while dissolving, and there is no alternative function at
hand.
Anyone an idea what to do? Seems I'm caught in kind of
a time/version hole.
