Ok, now I did as you described. qgis debian repo only.
GRASS works in Processing, but does not in a freshly created model.
Furthermore there is no SAGA available in the toolbox.

I simply would like to have back my fully working environment, like every noob would have it on Windows without anything to do.

I was sure that processing 2.93 had a working GRASS7 toolbox
But this was with QGIS 2.8.2 some days ago.
Now that I updated to 2.8.3, this also seems not to work anymore. This time, it's not complaining about missing GRASS, but the algos simply do run with errors and without result.
Updating to processing 2.10.1 -> GRASS not available at all.

Using the model builder to create some workflow, I became aware that there is a Processing update available. Doing this update, the model doesn't work anymore, cause GRASS stopped working in the toolbox.

When I do a fresh install without updating Processing, I get an error when I try loading my model (which I unfortunately saved with the new Processing version).

Ok, I could create that model again with the non-updated Processing version, so the GRASS function I need is available, but I also rely on the new "OGR Dissolve Polygons" function introduced with the new Processing version, cause I need to sum up an attribute while dissolving, and there is no alternative function at hand.

Anyone an idea what to do? Seems I'm caught in kind of a time/version hole.
