Hi Riaan,
if you want to create contour lines only between a minimum and maximum
elevation from a DEM raster layer, then you could use the GRASS
"r.contour" processing algorithm in QGIS.
Using such processing algorithm you can specify the "Minimum contour
level" and the "Maximum contour level" parameters.

I am trying to get a contour(s) line(s) derived from a DEM.
The problem with this tool is that it does not appear to have a MIN/MAX
function.
