... well, once spammers find out about a form without Captchas, they send YOU spam through your own, many times a day. I had this with my SMSQ contact form, so I had to put some additional checks before submission in to stop that happen.
Also, I think that the mail traffic is searched for email address in the headers, as some months ago spam started to appear on mail addresses which were only internally used between j-m-s.de and j-m-s.com, so no one did know about them, they were in no address book etc. and of course not composable like [EMAIL PROTECTED], [EMAIL PROTECTED], [EMAIL PROTECTED] I guess you can't prevent being spammed once you send a single email, but you are right: mailto makes it very easy.
