Hi Karl, sounds like a great project. I am sure that you will get it running and I encourage you to go for it and share your experience. But I personally would not do it, to be honest. To get really some added value, you will have to invest time in tweaking hardware and software. Are you ready for that?
My thoughts - Screen resolution: just try it out by resiing the QLGT window on your PC monitor - Usability of the UI. Unsure whether the current mouse centric UI is good for touch. I have tried QLGT and/or QMapshack on my HP Stream 7 tablet (windows) and it's not much fun - Screen visibility in bright sun? Is the backlight strong enough? - Robustness against rain and mechanical damage? - Power consumption and resulting weight of the whole system? - Us a USB GPS "mouse" instead of the eTrex. This will make tha package smaller and you have the chance to get a chipset wither better performance and e.g. GLONASS suppport.
