10mb seems to be enough for me. The Sophie run file on my box looks like 
this:

exec softlimit -m 10000000  \
/usr/local/bin/setuidgid qmailq /usr/bin/sophie -d 2>&1

Note: I am running Redhat 7.3. As you can see sophie is running as a 
daemon process.

Ok every time qmail-scanner runs it also executes an instance of perl. So 80 
concurrent connections means 80 copies of perl running this might explain the high 
memory usage.

My box only has 256MB ram. It has no problems processing 200 emails at a time. CPU is 
AMD K6/2 500.

I can't offer a solution but I hope this information helps you find one.
