ooo I want to do this, but haven't gotten around to it.  Good point.

How about instead of 127.0.0.1, the second instance listens on a 2nd
public IP.  

Then you can have your MX point to that 2nd public IP, and the users can
continue to use your 1st instance/original IP.

Will that work?
