Or you could just go in and remove all the rules in /usr/share/spamassassin and then run spamassassin -D --lint, then restart spamd. You can also edit your config file (/etc/mail/spamassassin/local/cf) and change the point threshold to mark to something silly like 100 points. Then nothing would ever get tagged as spam.
