The backup server will only ever be 1 minute out from the primary." I believe that it covers what you're trying to achieve. Jake has point me the backup & restore script guides, but that needs manual job when Mail Server 1 is down, someone have to manually restore the backup in Mail Server 2, then only can replace Mail Server 1.
