Hi!
If the domain differs it's quite simple to add forwards for specific email addresses
to the receiving domain. Otherwise, when I remember right, Exchange can be programmed
to fetch some pop accounts. Just google for <exchange server fetch pop account>.

Does the Exchange machine use a different domain name?
I seem to remember something about adding the user to smtproutes or
something; it'll be in the archives somewhere, where a user was doing
something similar, and just routing them to the Exchange machine's IP
address.
If not, maybe fetchmail under cygwin on the windows box to poll those
specific accounts maybe?
