We know the username is correct but the iPhone seems to prefix
the username to the mail server address. Yet if we remove the
server address from the username then we get the same error

Dovecot I presume?

You should use TLS always, as the dovecot configuration enforces a secure connection. When you use TLS, you can then use plain or login authentication types, as the session is already secure. IIRC this can't be set in the 'wizardly' configuration, but needs to be done manually after the account is created. It's been a while since I did an iPhone, but I do remember it being a PITA. You'd think iPhones would be a bit easier than they are in this regard, as most things are pretty trivial.
