There shouldn't be much that needs to be updated. clamav and dovecot seem to be the only things upstream with significant activity. Both of these should be update-able via yum.

I still need to add a few things to dovecot to handle the migration from courier though. clamav should have a few tweaks as well, such as shutting down and starting up clamav in the %pre and %post scripts.

I expect these sorts of things to be flushed out during beta testing, which is why it's a really bad idea to install packages in the testing repo on a production host. However, I'll be building my new hosts from the testing repo, which should be relatively safe.

When there are fixes to be made to testing, they need to delivered rapidly and with little effort (releasing a package 'manually' is fairly labor intensive and thus prone to error). That's why it's imperative for me to get the build scripts in place before proceeding with beta testing in a big way.

I'm guessing that the build scripts are about half done presently. They'll be packaged up in a qmailtoaster-develope package when they're all done, so anyone can install them and work on developing QMT packages. You'll simply need one VM (or more) for developing.
