I was going to recommend rsync as well without the "--delete" option if only one backup will be used. This backup has the potential of getting big so you could purge of old email.

On some sites I keep a weeks worth of backups 1 for every day of the week backed up at the end of the day so we can retrieve email for users up to a week old.

You can create a directory called backup and schedule a task that runs every 10 minutes, this way you will have a copy of all the emal and when you want to see a mailbox you will only have to copy from the copy mailbox to the original one.
