You're on the right track here, but I can't tell from your description where
you returned null. In any case, if you extend
qx.ui.table.celleditor.Dynamic and override createCellEditor(), and have
your overridden method return null when you wish to disallow editing of a
particular cell, that should accomplish what you're looking for.
