First sign would be running somewhat slower. Not by much, and it wouldn't 
be very noticable, so don't count this as a sign.

Next would be freezing, either randomly or to the point of it not starting 
up. If it gets this far, turn it off.

Next would be actually taking damage, quite likely rendering it useless.

Last would be releasing the magic blue smoke in the chip, causing lots of 
trouble and a nasty stink. Not to mention the risk of a fire.

For a rather dramatic showing, go to 
http://www6.tomshardware.com/cpu/20010917/ and look for the video that 
compares what happens to various x86 chips when you remove the heat sync. 
Probably need a bit more than a Quadra to see it at full beauty, but who knows.
