NetBSD and Debian Linux both have 68K ports

Samba makes Linux file servers and printers visible to Windows machines.  For 
Macs you need netatalk instead, which I've used (on Linux only,  and I 
haven't actually tried the 68K ports) with good results.  

If you just want to quickly set up an mp3 server though,  it's a lot easier 
to just use Mac OS.  Debian or BSD would make a fun project though.
