I have never bothered with track day insurance. It's normally about
£100 / day with an excess of around £2k. In my books, providing you
drive within your limits and are vaugley sensible, you should be OK.

I have a friend who has an Elise and he does have trackday insurance
(for upto 6 a year) as part of his insurance policy, the trackday
organisers are specified on the policy and you have to give them prior
notice. Can't remember who they are, but something along the lines of
Performance Car........
