Have you got air filters directly on the TBs or a run of pipe you could add an 
extra inlet too?

The engine used to have the standard inlet manifold, but is not running with 
throttle bodies, so I can no longer vent into the inlet.

The rocker cover breather was just venting downwards - it doesn't look like 
that pipe have been blowing out oil.  The crankcase (one below the piston 
level, was being fed into the old inlet and it was these that I was considering 
connecting together, but I now realise that wouldn't be a good idea.  Not 
having a vacuum to draw out the fumes we will need to look at some form of 
catch tank set up.

Did you mean sump breather (i don't think there is one of those) into the 
crankcase breather.

There is just the one crankcase breather (this is just above the sump) on the 
Zetec-R and Zetec-E

The Zetec breather system has a connection from the crankcase (on the front of 
the block) via a one way valve into the inlet manifold that maintains a slight 
vacuum inside the crankcase.
There are oil drain passages in the block from the crankcase to the head so the 
crankcase and rocker cover are directly connected effectively.
The rocker cover has a vent pipe that goes off to the air filter, the engine 
will normally have a slight vacuum inside the crankcase and will be sucking a 
small amount of air in via this pipe.

If you remove the connection into the inlet manifold like a lot of people do 
then you will have some pressure in the crankcase (from combustion fumes 
getting past the rings) instead of a small vacuum.
This will tend to blow out some oil along with the crankcase fumes and need a 
catch tank as been mentioned.
With the standard system this oil just gets sucked into the engine and burnt.
