I'm currently working on a project in Quartz composer using a Core
Image kernel with an accumulator to perform a physical simulation.
I'd like the simulation to run as fast as possible rather than only
updating once per frame - is there a way to achiece this, eg. by
turning off VBL sync?

You can turn off VBL Sync by holding down the Option Key, selecting Preferences from the Quartz Composer menu, and selecting "disableVBLSyncing" under the "(Editor)" tab. You'll have to restart QC for this to take effect.

Otherwise, you may have better performance by writing a thin application that doesn't render to the screen at all.
