For booting the install or for being installed? I expect that changing the kernel being used during the install should be as simple as replacing the isolinux/vmlinuz* / EFI/BOOT/vmlinuz plus initrd in the install media. Changing the kernel that is getting installed may be harder, although it can surely be inserted into Packages/ but anyway you could drop the right file into the boot partition just until you get to install it correctly.
