Paula, As time goes on you will find there are many quick and simple dishes you can make that are vegetarian. One of my favorites in a home made pot pie. I use ready to bake pie crust, throw in whatever veggies sound good, a can of mushroom soup or other cream soup, top with bread crumbs or whatever and bake. Easy and quick!! I'm glad you are becoming less nervous about your choice to become vegetarian.
