I believe midi itself is indeed from 1983. The first synth to use it was
the imortal dx7, but you can read more about that over at
http://synthmania.com/dx7.htm
I've found that sight to be a huge resource for knowledge about synths. And
hey if your interested in keyboard demos, check out http://kbdemos.uni.cc
There you'll find more than enough demos to suit your fancy!

The 1996 thing you're thinking of was probably XG, Yamaha's standard.
I think there was even some work done on the GM standard as far back as
1983, but nothing was finalized for a while.

From what you are saying, it sounds as if you are using the Microsoft
GS wavetable synth. Many a descussion has gone on here about it's
latency. It is *not* recommended for recording use. It really isn't
even recommended for playback, as it's sounds are extremely out of
date, but
at
least with playback, you don't have to worry about the delay.
Unfortunately, unless you have a soundcard with a different synth
onboard,
or are willing to use free vst's and something called asio4all, you are
a
bit stuck. Or you could of course by a very cheap PSR with internal
sounds, thus bypassing the need to use the GS wavetable.
In any case, getting that out of your midi setup will be a huge
advantage
and I would urge you to do this yesterday, if possible.
