The OS is quite likely some custom, embedded Linux, but it sounds like your bigger problem is that your NAS's hardware isn't up to running SBS. SBS runs fine on many NASs, but on others it's a non-starter. If you don't want to run SBS on one of your regular computers you could go for a different NAS, but instead I'd recommend an energy efficient headless PC, which will in many ways be better than a NAS, and for a comparable price.
